Seasons For Success

"To everything there is a season..."

Now that summer is almost here, it's time to get out the grill! Whether you use charcoal, wood or gas, there's nothing like outdoor cooking and eating. Here are a few tips to get you started:

  • Avoid super lean meats, since some fat is needed for juiciness.

  • Sear both sides of your meat early on, to seal in the juices.

  • Your grill likely has "hot spots." To avoid half your food being charred and the other half being raw, rotate it.

  • Use tongs or a spatula to move and flip meat. Piercing with a fork will cause juices to run out.

  • Add sauces towards the end of the cooking time. Dripping sauces create high flames that burn the outer layers of the meat before the inside has time to cook.

  • Don't return cooked meat to the same dish that held the raw meat.

  • Use Watkins savory dry rubs, seasoning blends, and sauces to enhance flavors.

    Product News

    Sanisol Disinfectant Spray. We have voluntarily stopped sale on our Sanisol Disinfectant Spray, product #06739 due to an unanticipated problem with the supplier. A similar product to Sanisol, originating from this same supplier, did not meet recent EPA efficacy requirements. This suggests that the product may not meet the claims made by the supplier. The actual safety of the product is not in question. While it is not yet clear if Sanisol Disinfectant Spray is directly involved in any EPA action, Watkins has voluntarily stopped the sale of our product until we are sure it can meet the high quality that you can always expect from Watkins.

    These three products remain unavailable and without an estimated availability date. As you may recall, we had problems obtaining key ingredients for each of these products last year and were searching for appropriate replacements. We are diligently working to return all three of these products to our line of gourmet foods. This process will still take some

    time, as ingredient changes and reformulations of our products must meet Watkins high quality standards.

    Salade Niçoise

    Salade Niçoise using Watkins Gourmet Ingredients

    • 1 head Boston lettuce, broken into pieces
    • 1 lb/450 g fresh string beans, steamed, cooled, in half lengths
    • 4 hard-boiled eggs, cooled, quartered
    • 8 red potatoes, boiled, cooled, halved and sliced
    • 2 tomatoes, cut into wedges
    • 2 (6 oz/170 g) cans solid olive oil-packed tuna, drained
    • 24 Niçoise or other brine-cured ripe olives, pitted
    • 4 oil-packed anchovy fillets, drained, chopped


    • ½ tbl/7.5 mL Watkins German-Style Mustard
    • ¼ cup/60 mL red wine vinegar
    • 2 tsp/10 mL Watkins Italian Salad Dressing Blend
    • ¾ cup/180 mL Watkins Garlic & Parsley Grapeseed Oil
    • Watkins Sea Salt to taste

    Whisk vinegar and seasoning into mustard. Slowly whisk in oil. Let stand 30 minutes to allow flavors to develop. Season with salt as needed.

    Arrange salad ingredients nicely atop lettuce leaves (or toss, if you prefer). Pass dressing or toss with salad.

    Serves 4.

    Triple Chocolate French Silk Pie

    • ½ cup/125 mL butter
    • 3 oz/85 g unsweetened baking chocolate
    • 3 eggs
    • 1 cup/250 mL granulated sugar
    • 2 tbl/30 mL cornstarch
    • 2 tbl/30 mL Watkins Pure Cocoa
    • 1 tsp/5 mL Original Double-Strength Vanilla
    • 1 tsp/5 mL Chocolate Extract
    • 1 cup/250 mL heavy whipping cream

    • 1 baked pie crust

    Melt butter and chocolate over low heat. Combine cornstarch, cocoa, and sugar and then stir into chocolate mixture.

    Beat eggs with a mixer until frothy, about 2 minutes. Stir eggs into chocolate mixture and cook over medium heat for 5 minutes. Remove from heat and stir in Vanilla and Chocolate Extracts. Let cool 15 minutes.

    Beat whipping cream in chilled bowl until stiff. Carefully stir chocolate mixture into whipped cream and spread in cooled pie shell. Cover and freeze at least 3 hours or until firm. Garnish with chocolate shavings before serving.

    Makes 12 servings.
