Recipe Name: Betty's Best Zucchini Bread

Description: If your garden is overflowing with zucchini (who's isn't?) grate up a couple of the green monsters for this recipe.
  • 3 eggs

  • 1 cup sugar
  • 1 cup Watkins Original Grapeseed Oil
  • 1 tsp Watkins Vanilla extract

  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp Watkins Baking Powder
  • 1 tsp salt
  • 2 tsp Watkins Cinnamon Apple Bagel Spread Mix***
  • 1 tsp Watkins Cinnamon
  • ½ tsp Watkins Nutmeg

  • 2 cups grated Zucchini (about 2 large)
    Preheat the oven to 350° F. Grease well 2 loaf pans, each 8½x4½x2½ inches (or a Bundt Pan).

    In a large bowl, beat the eggs until foamy. Add the sugar, Grapeseed Oil and Vanilla. Sift together the remaining dry ingredients and add to the egg mixture a little at a time. Add the zucchini. The batter will be thick and gummy.

    Pour the batter into the prepared loaf pans (or Bundt cake pan) and bake for 1 hour. Check after 50 minutes. If a toothpick comes out clean, the bread is done.

    This "bread" has a nice, light texture and wonderful taste.

    ***Watkins Cinnamon Apple Bagel Spread Mix no longer available. Substitute ½ tsp Watkins Apple Bake Seasoning.
