Here's a quickbread for gift-giving or holiday eating!

I shamelessly used my unsuspecting in-laws as guinea pigs to taste-test Watkins Apple Spice Bread Mix. I served this bread to them as part of a brunch while they were visiting over Thanksgiving week, but I didn't hear any complaints.
My attempt in making the bread didn't go quite as smoothly as I'd hoped, however. Here are the directions on the package:
In a medium bowl add 1 egg, ½ cup/125 mL milk, ½ cup/125 mL applesauce and blend these well. Add the spice bread to the bowl and stir to mix; do not over mix. Let the mix sit for 1 minute. Melt ½ stock butter and stir into the mix.
For muffins - Preheat oven to 350°F. Lightly spray muffin tin with Watkins Cooking Spray. Bake the muffins for 20 minutes.
For 8' x 8" and 9" x 9" inch pans - Preheat oven to 350°F. Lightly spray the pan with Watkins Cooking Spray. Bake for 25 minutes.
Very simple, right? Of course, I had to make it complicated. I don't have a square pan, and didn't want to take the time to make muffins, so used a 8" x 4" x 3" bread pan. Apparently there's a reason this size pan isn't listed in the directions; the dough wouldn't cook in the center. I didn't keep track how long I baked the bread, but it was probably 50 minutes before it was done in the center. Of course, by that time the crust was a little more brown than I would have liked.
Despite that, however, the bread was delicious. It didn't last long with a houseful of guests! I like this bread a lot; it's as good as last year's Orange Spice Bread.
Four stars out of five: The mix goes together quick & easy, and tastes heavenly. It's a bit pricey, but would make a great addition to a gift basket either as a mix or already baked.
