Description: An elegant yet easy recipe for impressing guests.

Sauté onion, garlic, pepper, and herbs until pepper are crisp-tender; about 8 minutes. Add the wine and simmer till liquid is reduced by half; about 10 minutes. Add the tomatoes and simmer gently till the tomates are tender and juices form; about 40 minutes.

Stir in olives and capers. Place salmon steaks over tomato mixture and cover with lid. Simmer until salmon flakes easily, about 30 minutes. (You may want to flip salmon steaks over halfway through to ensure even cooking.)

Meanwhile, heat 1 tbl oil and black pepper in large saucepan. Add fresh spinach and sauté till leaves are just wilted, about 2 minutes.

To serve, place salmon steak next to a mound of spinach on a plate. Spoon salsa over all.

Makes 4 servings. Serve with rice.


  • Salmon - substitute with any white fish. Tilapia is especially good, but I've also used cod and whiting. I've even served it with canned salmon.
  • Garlic, oregano, basil - substitute with their dried counterparts from Watkins.
  • Garlic & basil - substitute with wet pesto.
  • Jalapeños, peppers, tomatoes, and spinach - substitute with canned or frozen.
  • Kalamata olives - supbsitute with black or green olives.
  • Leftover fresh oregano & basil sprigs can be frozen for future use.
