|Preheat the oven to 350Â° F. Grease well 2 loaf pans, each 8Â½x4Â½x2Â½ inches (or a Bundt Pan).
In a large bowl, beat the eggs until foamy. Add the sugar, Grapeseed Oil and Vanilla. Sift together the remaining dry ingredients and add to the egg mixture a little at a time. Add the zucchini. The batter will be thick and gummy.
Pour the batter into the prepared loaf pans (or Bundt cake pan) and bake for 1 hour. Check after 50 minutes. If a toothpick comes out clean, the bread is done.
This "bread" has a nice, light texture and wonderful taste.
