Seasons For Success

"To everything there is a season..."

Recipe Name: Tuna Puffs
Category: Appetizers
Recipe From: Lynne Mickley
Description: These are so good, we usually have them as the main course!

Ingredients:
Puffs:
  • 1 cup water
  • ½ cup (1 stick) margarine
  • dash of salt
  • 1 cup flour
  • 4 eggs

    Filling:
  • 2 (6oz) cans tuna
  • ½ cup chopped celery
  • 2 tbl chopped onion
  • 1-2 tbl sweet pickle relish
  • 2 tbl mayonnaise or salad dressing
  •
    Instructions:
    Preheat oven to 450ºF.

Combine water, margarine & salt in saucepan and bring to a boil. When margarine has melted, remove from heat, add flour, and beat. Add eggs one at a time, beating after each addition.

Drop by spoonfuls onto greased cookie sheet. Bake for 10 minutes at 450ºF. Lower temperature to 350ºF and bake another 10 minutes. Remove from oven and let cool.

Meanwhile, combine tuna, celery, onion, relish and mayonnaise. When puffs are slightly cooled, slice the top of each puff and fill with tuna mixture. Replace the top of puff. Makes about 25 puffs.

    Tips:
A cookie dough scoop works great for making rounded, well-sized puffs.
Make the puffs smaller for appetizers, larger when using for the main course.
