Bake Your Gifts This Year


When you're needing fast, cheap gifts for teachers, friends, and family, get out your baking pans! Who doesn't appreciated baked goodies? (Unless it's fruitcake. smile)

 

To that end, I found a cute way to present home-baked breads--in a canning jar! Simply mix up some batter, bake it in pint jars, and add a pretty piece of fabric and ribbon to the lid.

 

So far I've only tested the recipe below, but I think almost any sweet bread would work. Just be sure to use canning jars, not any glass jars (which aren't meant for high heat.)

Banana Nut Bread in a Jar

Show Mother Earth your Appreciation; Go Green With Watkins


2/3 cup margarine

2 2/3 cups white sugar

4 eggs

2 cups mashed bananas

2/3 cup water

3 1/3 cups all-purpose flour

1/2 tsp Watkins Baking Powder / Canadian Link

2 tsps baking soda

1 1/2 tsp salt

1 tsp Watkins Cinnamon / Canadian Link

1 tsp Watkins Ground Cloves / Canadian Link

2/3 cup chopped pecans

Watkins Cooking Spray / Canadian Link

 

Cream margarine and sugar in large bowl. Beat in eggs, bananas, and water. Sift together flour, baking powder, soda, salt, cinnamon, and cloves. Add to banana mixture. Stir in nuts.

 

Spray insides of 8 (1 pint) wide mouth canning jars with Watkins Cooking Spray. (Be sure to use wide mouth jars that are slightly wider at the top than at the bottom, otherwise you won't be able to get the bread out of the jar!)   Fill each jar 1/2 full of batter. Wipe each rim clean if any spilled.

 

Carefully place jars directly on the oven rack. (This allows for more even baking.) Bake at 325°F (165°C) for 45 minutes. Meanwhile, sterilize the lids and rings in boiling water.

 

Remove jars from oven, wipe rims again if needed, and put on the lids and rings. Tighten rings as much as you can. Jars will seal as breads cool. After jars are cool, make sure they sealed by pressing lid. If it clicks, it didn't (and won't) seal. To present as a gift, cut a square of holiday fabric. Unscrew the ring from the jar, place the fabric on the lid, and screw the ring back on. Tie a pretty ribbon around the edge of the ring.

 

Breads can be kept sealed in the refrigerator for up to a week.

Pumpkin Bread


3 cups/750 mL all-purpose flour

1 tbsp/15 mL Pumpkin Pie Spice / Canadian Link

2 tsp/10 mL baking soda

1-1/2 tsp/7.5 mL salt

1/2 tsp/2.5 mL Baking Powder / Canadian Link

4 large eggs, slightly beaten

2-3/4 cups/700 mL sugar

2/3 cup/160 mL Original Grapeseed Oil / Canadian Link

2 cups/500 mL canned pumpkin

2/3 cup/160 mL water

1/2 cup/125 mL coarsely chopped nuts, if desired

 

Combine first five ingredients in medium bowl. In another bowl, beat together eggs, sugar, oil, pumpkin and water. Add dry ingredients; mix until well blended (do not over-mix). Fold in nuts.

 

Pour batter into two greased 9 × 5-inch/23 × 13-cm loaf pans. Bake at 350ºF/180ºC for 1 hour or until bread tests done. Cool slightly and remove from pans to wire rack to cool.

 

Makes 2 loaves, 20 servings.
