Greetings!
Brrr...
As I'm writing this, the
temperature outside is a frigid
0°F and dropping. What
a way to start the New Year!
But when there's a chill in the
air, a cold in your head or an
ache in your heart, a bowl
of chicken soup is very soothing.
Good for body and soul! To that
end, below is a recipe for a
quick-cooking and delicious
Chicken Noodle Soup, as well as a
recipe for Shrimp Bisque. Both
are sure to warm you
this winter! ****
Since
it's a new year, I've decided to
make a change to my
monthly drawing for a

Chicken
Noodle Soup
1 (2-1/2
pound/1.25 kg) frying chicken,
cut into pieces, skinned if
desired
3 quarts/liters water
1/2 cup/125 mL Chicken
Soup & Gravy / Canadian
Link
1 or 2 bay leaves
1/2 tsp/2.5 mL Black
Pepper / Canadian
Link
2 cups/500 mL sliced carrots
2 cups/500 mL sliced celery
1/4 cup/60 mL chopped onion
1 recipe Homemade Egg Pasta
(recipe below) or 8 oz wide-egg
noodles.
Combine all ingredients except
pasta in large soup kettle. Bring
to a boil; reduce heat and simmer
20 to 30 minutes or until chicken
is tender. Remove chicken from
kettle with slotted spoon and let
cool. Remove skin and bones from
chicken and cut meat into
bite-size pieces. (If desired,
fat can be skimmed off the top of
soup at this time.) Return
chicken to pot and bring to a
boil. Add pasta and cook 5 to 10
minutes or until pasta is tender,
stirring occasionally. Makes 8
servings. |

Homemade
Egg Pasta
2
cups/500 all purpose flour
1/2 tsp/2.5 mL salt
2 eggs, beaten
2 tsp/10 mL Original
Grapeseed Oil / Canadian
Link
3 to 4 tbl/45 to 60 mL water
Combine flour and salt in small
bowl; mix well. Make a well in
the center and add eggs and oil;
mix thoroughly. Gradually add in
the water, 1 tbl/15 ml at a time,
until dough is stiff but easy to
roll. On lightly floured surface,
knead dough until smooth, 2 to 3
minutes. Cover and let rest for
30 minutes.
On floured surface, roll half of
dough out as thin as possible
into rectangle (about 18 × 15
inches/46 × 38 cm). Sprinkle
lightly with flour. Starting at
shortest side, loosely fold dough
over into thirds. Cut crosswise
into slices (1/4-inch/6-mm slices
for fettuccine or 1/8-inch/3-mm
slices for linguine). Unfold
slices; if desired, cut into
shorter lengths. Repeat with
remaining half of dough.** If
noodles stick, toss with extra
flour and allow to dry separately
on waxed paper. Shake off excess
flour before cooking.
Makes about 1 pound/454 g
uncooked pasta; 6 cups/1.5 liters
cooked (1 cup/250 ml per
serving).
*Try other flavors of Grapeseed
Oil or a Watkins Liquid
Spice instead of oil.
**To roll and cut pasta using a
manual or electric pasta machine,
follow manufacturer's directions.
Food Processor Directions:
In food processor bowl with metal
blade, combine flour and salt. In
measuring cup, combine oil and
eggs. Pour into tube and pulse
on/off until mixed. With machine
running, add cold water 1 tbl/15
at a time until dough forms a
ball.
Pasta dough or fresh noodles can
be stored in plastic bags in
refrigerator up to 3 days or in
freezer up to 1 month.
Cooking Directions:
Add to broth as directed in above
recipe. Or, bring 3 quarts/liters
of salted water to a boil; drop
pasta into boiling water. Return
to a boil and cook, uncovered,
for 5 to 10 minutes or until
pasta is tender, stirring
occasionally; drain. |
Shrimp
Bisque
4 cups/1 litre
water
3 tbl/45 mL Chicken
Soup & Gravy / Canadian

1 cup/250 mL diced potatoes
1/2 cup/125 mL chopped onions
1/2 cup/125 mL diced carrots
1/2 tsp/2.5 mL Garlic
Powder / Canadian

1 can (12 fl oz/355 mL)
evaporated milk
1 lb/450 g cooked, shelled shrimp
( any size)
2 tsp/10 mL Garlic
Liquid Spice / Canadian
Link
Combine water and soup base;
bring to a boil. Add potatoes,
onion, carrots and garlic
granules. Simmer until vegetables
are tender, approximately 10-15
minutes. Stir in evaporated milk,
shrimp and Liquid Spice; simmer
until shrimp are heated through. |
Chicken
Pot Pie
6 tbl/75 mL butter
or margarine
1/2 cup/125 mL chopped onion
1/2 cup/125 mL all-purpose flour
2 tsp/10 mL Parsley / Canadian

3/4 tsp/4 mL Poultry
Seasoning / Canadian
Link
1/4 tsp/1.2 mL
3 cups/750 mL water
3 tbl/45 mL Chicken
Soup & Gravy / Canadian

3 cups/750 mL cubed, cooked
chicken or turkey
1 package (10 oz/285 g) frozen
peas and carrots, tender-cooked
and drained
1/4 cup/60 mL chopped pimento
1 package refrigerated biscuits
(6 per package)
Melt butter in a saucepan. Add
onion; cook until tender. Stir in
next six ingredients; mix well.
Cook until thickened and bubbly.
Stir in chicken, vegetables and
pimento; heat until bubbly.
Divide mixture into six
individual casseroles. Cut each
biscuit into quarters; place four
quarters on top of each
casserole. Place on shallow
baking pan; bake at 450°F/230°C
for 8 to 10 minutes or until
biscuits are lightly browned.
Makes 6 servings. |
